Certified Organic Pork

Full Moon Farm raises certified organic pork on farm. In addition to regular cuts, (chops, ribs, shoulder roasts, loin roasts, Boston Butts, country-style ribs, etc) we make our own unique sausages right here on the farm. We use fresh vegetables and herbs from our own fields, (or those of our organic neighbors,) to make some of the freshest and tastiest sausages you will ever eat.

Full Moon Farm Sausage Varieties

None of Farmer Rachel’s personal sausage recipes use sugar or sulfites. However, her Maple Breakfast sausage recipe uses real, organic maple syrup and the Sweet Italian sausage is mixed at the Royal Butcher where we have our hogs slaughtered. They do add sugar to that recipe. If you like sweet Italian sausage but don’t want added sugar, try our Summer’s Garden.

  • Summer’s Garden: Like a Sweet Italian but sweetened with fresh fennel instead. And brightened with fresh parsley and oregano from Full Moon Farm.

  • A-Maize-Zing: Amazing with mexican dishes! Full Moon Farm’s sweet corn mixed with various paprika’s and chilis to ever-so-slightly spice things up.

  • Monkburg Brat: My first sausage recipe, I created Monkburg Brats to highlight some of the best ingredients on certified organic farms in the Monkton/Hinesburg area: Full Moon Farm’s pork, Last Resort Farm’s fresh baby ginger, and Kimball Brook Farm’s organic heavy cream.

  • Curried Butternut Squash: A combination of our organic pork, butternut squash and a curry combination of Farmer Rachel’s own design. Farmer Rachel spent a year in south Asia and her explorations of various curries and spices really pays off in this sausage recipe!

  • Garlic Basil: Need we say more? Tons of Full Moon Farms Garlic and Basil. Just add pasta and plain tomato sauce and you’ve got yourself a dinner.

  • Mexican Chorizo: This is a fresh, not smoked, chorizo. So many different spices in just the right combination as to make it super flavorful and not too spicy.

  • Sausage Verde: Just like it sounds, salsa verde ingredients mixed with sausage, only better! Maybe it’s all that cumin?!?!?
